Avgolemono





Ingredients:
4 Cup Chicken Broth
2 Whole Egg Beaten
1 Whole Lemons Squeezed
3/4 Cup Orzo Dried
1 Handful Parsley Fresh, chopped
1 Pinch Pepper To taste
1 Pinch Salt To taste
Directions:
  • Bring the broth to a boil and add the orzo.
  • Cook until the orzo is tender.
  • Take the soup off of the element.
  • Add the lemon juice to the eggs and beat well.
  • Take a ladel full of the broth and add to the egg/lemon mixture whilst beating well.
  • Take care the eggs don't curdle, If they do, add an ice cube.
  • Slowly stir the egg/lemon mix into the soup.
  • Add your chopped parsley and a little salt and pepper.
  • You could also make this with a vegetable broth.
  • If you make your own chicken broth, add some of the chicken meat.
